Gluten free lemon glazed cookies!
Wow!!! These cookies are absolutely amazing! I got the recipe from a friend and then realized later that I had the recipe all along in my 1000 gluten free recipe book!
Gluten
Free Lemon-Glazed Lemon Cookies
Flour
Blend Helpful
Gadgets
2 cups of all purpose pastry brush
gluten free flour 1 1/2 inch cookie scoop
1
tsp. xanthan gum
½
tsp. baking powder
½
tsp. salt
Place
ingredients into a heavy duty Ziploc bag. Close the bag and shake to
mix thoroughly. Set aside.
Mix
½
c. (1 stick) butter
1
c. sugar
1
Tbsp. packed brown sugar
1
large egg
2
Tbsp. pure vanilla extract
2
Tbsp. fresh lemon zest (use ½ of a large lemon or 1 small lemon)
Gradually
add flour blend until all ingredients are well mixed. *Tip: Use wet
hands to get excess cookie dough off of mixing whisk. Place dough (in
the mixing bowl, covered) in the freezer for a few minutes while you
prepare the glaze and preheat the oven to 375 degrees F. This allows
the dough to become easier to work with and prevents spreading.
Glaze
Juice
the lemon
(1/2 of a large one or 1 small one)
Add
powdered
sugar
to the lemon juice until it has a glaze consistency. About 1 cup.
Set
aside.
Cookies
I
HIGHLY suggest using a 1 ½ inch cookie scoop for these cookies, as
the dough is VERY sticky!!! Drop cookies onto a greased/sprayed
cookie sheet. Spray the bottom of a cup with baking spray then use to
press cookies down a little bit. Bake cookies at 375 degrees F for
about 12 minutes.
After
the cookies are done baking place them on a cooling rack until cool
then uses a pastry brush to brush glaze over cookies. Cool.
Eat
these cookies within 48 hours or freeze. They freeze great for up to
a month. Place in a Ziploc bag and freeze. When you want a tasty
treat pull a cookie out of the freezer, stick it on a paper towel,
wait a half an hour and then enjoy! Makes about 22 cookies.

Pumpkin Patch 2011
Every year to get pumpkins we go up to Greenbluff, There are tons of different pumpkin patches and so many fall things to do up there! Not to mention it is up in the mountains so the drive there is absolutely beautiful!! It was great fun this year because Cody was actually old enough to really realize what we were doing and appericiate it!
Halloween 2011
It was a great Halloween this year! We started off going to the church where the kids go to kids group at, where we had dinner and snacks, played games and did cake walks! The church near our house really does a great job at giving the kids a fun safe place to go for Halloween! Riley ended up being a Japanese girl, because we recently had our Friend Miho come visit us from Sendai Japan! And of course Cody had to be something to do with camouflage and was and Army guy!
Afterwards we headed home and got all bundled up to go trick or treating! For some reason my kids are odd and would rather hand out candy then go get it! So I told them they had to at least trick or treat just our street cause are neighbors wanted to see what their costumes were and I also wanted some candy hahhaha!!! Then we headed back to the house to watch Ghost hunters and hand out candy! I was excited we were going to be outside in the cold because it gave me a reason to wear my new alpaca sweater that was especially warm!!
Earlier in the day Me and Cody went to Riley's school to help out with Rileys class halloween party!

An easy Eye!
Yes, I know the picture says 2007 and no this picture is not from then. I constantly am changing the date on my camera and it is always going back to some weird date! I really liked my eye makeup this particular day, mainly for the fact that it was very easy to do and still looked great! I just took an Ulta black pencil eyeliner and lined the top of my eye from the outside going in only half way and then smudged a dark grey eyeshadow into the eyeliner with a small eye brush and brought it out to a wing, then lined my water lines and mascara! That was it! Very simple and looked great!
Lounging with my twin!!
A couple of months ago we went home, and I spent an entire day at my sisters house, Just me and her! Some much needed twin time! We made a Giant bed in her living room and she got me all caught up on Game of thrones and True blood!! Sometimes its good to just be lazy and Veg!!!
